lots going on.
skipping over ninetyeight percent of it to say that i had a cozy thursday with johnny in the city.
made an event of going to the udlændingeservice to hand in my ægtefællesamføring papers so i can get that most prized of visas in my (new) passport ... permanent residency, laaa..::glory::.. we took a number and spent the hour of waiting to be called sitting at the lakes, then handed in all the stuff and headed over to have a burger. all thats left is to wait...three months?...until i am approved. and then i can get a job.
in the meantime, i am heading back to danish class. starting tomorrow...really looking forward. i have plenty of time now so...way to fill it with something productive. called the school today to set up an appointment and spoke about five minutes in danish with someone on the other end who turned out to be an american...at which point in the conversation we switched to english, because it feels weird. realized after i hung up that i didnt quite know that was an american accent because none of my american friends ever speak danish, and i had never heard it before. bizarre.
these days have been mostly filled with good intentions, instant coffee, lots of jane austen (for whom i give daily thanks), contentment in marriage and baking. my latest triumph has been sunflower seed bread, which is as easy to make as it is delicious. enjoy the tune below as you are out on your bikes, milking the last truly sunny summer days in copenhagen.

finally got around to uploading the wedding pictures to facebook.

it was seriously one of the most beautiful days in the history of earth.
can hardly believe how we got so lucky when i look at those pictures - both with the weather, and with each other.
john is such a babe.
we went to a movie in the park last night - "zulu sommerbio" - where everyone brings a blanket, grills out on those mini webers, and watches a movie at 9.30. it is Super cozy - like the ultimate summer night. yesterday they showed this swedish movie called "mænd, der hader kvinder" - men that hate women. its based on the first book in a series of three that john has been devouring for the last two months, so we thought we would check it out. yea, apparently there were like 15,000 danes with the same idea. place was packed, and the movie - though Really good - has some super violent and disturbing scenes/themes (but that is a swedish movie for you - they are worse than the danes when it comes to this stuff...and thats not coming from me. i heard three different danes say it last night, no joke) ... so even while youre having it cozy in the open air with the stars and a few thousand of your closest friends, it is still Super Weird when there are like -- totally uncensored booty on the screen!! and there you are, in the middle of the mob, knowing that in every direction around you are tons of people watching that same booty on the gigantic screen. a bit bizarre.
finally started a blog for our business, which we are going to try and get in order so we can hopefully start by the end of spring next year. been reading a lot about marketing, very interesting stuff. we bought the domain name and ive drawn out the page designs and our business model is pretty close to water-tight...so the ball is rolling. and hopefully that ball will continue to roll until we can afford a nice big apartment in the middle of the city by the canals (which is really only 8 minutes away on the bike...we dont have it so bad right now at all), maybe a boat or at least his&hers jetskis, whatever we will need for little ones in the future, and enough left over for lots of family vacations. because i will be wanting to return to key west within the next few years.

i check the ice and i brush off my shoulder
wild week.
about eighty projects in the air right now, or five, but it is busy.
redoing the bathroom, because i couldnt stand to look at it anymore...
...started that last monday and "gave it gas" (as the danes say) for three solid days, then both money and energy sputtered out and died.
...and now i cant stand looking at the three-quarters done thing with nothing on the walls and nowhere to hang a towel. but the road to such a bathroom was paved with such intentions.
writing out and preparing to send like, ninety thank-you cards after the chicago party. that has been an undertaking.
its hard to sit down in front of a blank card (though it is fabulous and gorgeously typeset with the color, font and theme that has carried through our entire wedding -- and isnt that just the beauty -- looking at the whole production from invite to "thank you" and appreciating all the details that were planned in advance and tied the thing together...and quietly congratulating yourself for it)...and not spend sixty minutes telling each recipient exactly why you are so grateful that they came to your party and gave you something nice. it took me about six hours just to get through the first twenty. because everybody was so sweet to us. the heart is so thankful but the hand is weak and needs to be iced.
my mother wants me to send the cards from here, instead of boxing them up, shipping them to palatine and sending them there for fortytwo cents instead of about two dollars. and since she is still the boss of me (??!) i didnt feel like contesting. no problem, except that it costs like five times as much, and means that i will be adhering all manner of danish stamps to these cards for many, many hours in the days to come. its like nine kroner to send a letter to the states, so instead of just buying tons of 9kr stamps, i got like - .25s, .50s, 1krs, 2,50krs, 6krs, 8krs - so that every card will had a few different ones on there. it will take forever, but i hope it turns out cool. plenty of good music to tide me over as i work. see below for inspiration.
also been baking lots. friends coming over tomorrow for lunch will be greeted with cockatoo cupcakes (same recipe as the wedding cake, just with more mango these days because...i wish it was summer and this helps) and my new signature cookie: chocolate chip walnut with brown-sugar. i swear, even the most severe dieter would crumble against this cookie´s tasty charm. and yes, clearly, the pun was intentional.
speaking of hilarious and brilliant. wow - heavy sarcasm tonight...
i was signed in to an old gmail account before hopping over here to blogger and so it took me to a "dashboard" from many, many years ago...and brought up a list of a ton of old blogs that i havent used for such a long time and totally forgot about. spent some hours reading about the summer before my second year of masters, actually - gripping, crucial life drama, of course. just very interesting. i guess it was all a really long time ago even though i still feel like i am nineteen and kind of an idiot. being married doesnt change that. getting super old probably wont either. that is both comforting and bizarre.
anyway. baked cookies, baked cupcakes, made some kick-ay pizza dough with basil and enjoyed that tasty pizza with john, who is as handsome as he is patient and loving. a pretty good day, i will admit.
ps. spent an awesome afternoon on sunday in the middle of copenhagen with about 10,000 danes at a fest called stella polaris where they just set up a few tents in a huge garden by the state art museum and pump some really beautiful electronic music for hours and hours. it was totally surreal. there were beautiful danes all over the place, so chill, laying on the grass with a beer in one hand and the other in the air. that rolling stones remix down there was quite the hit. just saying - we have been out and about these days. gotta love this city.

anyway. some big changes.
got my new cpr card today. got our vielsesattest (marriage certificate) the other day. stuff is official. kind of fun.
next stop: filling out about 40 pages of formage for the foreign ministry so that i can get my permanent residency.

big week.
john and i had four and a half years on wednesday, which we celebrated by meeting greg and jimmy at the airport, then letting them crash on our floor. the air was heavy with romance.
still, wonderful to see the two. they walked into my apartment full of nasty one-liners, old stories and gifts from the homeland. dvs - my wedding dress, finally.
and my little chanels, which are too perfect for words. "divine" doesnt even fully do it.
they are full angelic. it is like heaven for feet.
felt amazing to hang my dress up in my bedroom and see it again. i tried it on last night after putting the boys on their plane to france and was happily surprised to see how much better it looks on me now that ive lost a few kilos. i am down about four since january when i had the dress altered, and my arms were in sad shape. or "none" shape. they were hardly arms. they were just existing. ugh, i hate to even remember them.
the nice thing about an empire waist is that you can lose weight and not worry about the dress hanging off you later. the back is a bit looser than it was in january, and i can zip and button everything without any help, but it looks so much better around the chest and shoulders. i am convinced again that it was the perfect choice for me.
having said that. i am high-fiving of myself for "giving it gas" with all this gyming for the last few months. i have really come a long way. i would have lost more kilos if i hadnt put on so much muscle. i am going to feel really confident in a bikini in key west, and i know john is proud of me. i looked at my arms yesterday and for the first time in...perhaps my whole life...i was pretty satisfied with them. i have lost serious inches around those pups.
this means a lot to me. being able to show up in frederiksberg have and walk towards john knowing i look the best i possibly can. not that its all about the outside on that day but i feel like the energy and sweat and time i have put into all this is a real statement of my love for him and my desire to be a nicely-wrapped gift myself. i have been to the gym every day for the last few weeks and as we were in bed last night he asked me whether i was sore at all...and i said of course, what, are you nuts? but i am also motivated. motivated beats sore. why do you think women wear outrageous heels.
greg brought some sweet stuff from gnc for me. a barrel of this protein shake mix i really like and some pills that help you lose like, seven pounds in water weight. sure, im all about the organic stuff and healthy whatever, but sometimes a little science can be incredible. those pills are going to help me look extra mini on the big day. if ever there was a time to do whatever possible for the tinyness - we have found it, and it is eight days away. my commitment holds fast!
final plans are coming together. the food is going to be incredible. the tables are already exquisite, even still in the planning. the programs are finished, the menus are being drawn up, john got a haircut, the weather reports are forecasting sun and my waist is little. how happy i am, and how excited!
in other news. got a mail from my mom detailing some renegade activity last week - definitely black ops, unsanctioned and unrequested. guh. dont know what to do about that one. john and i have talked a lot about it and i think we will take a lesson from childhood - waiting to speak until spoken to. but oh donna, your heart is so big.
off to prepare dinner for sonja & georg, who are stopping by the house of glitfeldt tonight.
i made little cupcakes with the wedding cake batter this morning when i was making one of the 10" round layers. they are super cute, and very mango-y. yummay.

john and i were on samsø this last weekend. the ultimate in hygge, where we spent the days just cozying ourselves and taking it slow. the plan was simply to relax, and we achieved our goals with ample success. we arrived late on friday night, spent saturday on the beach and biking around the island, and got a coffee and saw the sights on sunday. an early-morning return to copenhagen on monday, and now i am writing to you from my apartment on tuesday which smells like cockatoo cake, because i am making a few layers for the wedding.

for adventurers at home, here is my wedding cake recipe:
Cockatoo Cake a lá Reb
based on hummingbird cake, but with mango instead of banana,
which makes it lighter and more exotic...
3 cups / 7.1 dl flour
1 teaspoon baking soda
1 teaspoon salt
2 cups / 4.7 dl sugar
1 teaspoon ground cinnamon
3 large eggs, beaten
1 cup / 2.3 dl vegetable oil
1.5 teaspoons vanilla extract
1 8-oz can / 2.3 dl of crushed pineapple, undrained
1 large mango, finely diced (appx. 1 cup / 2.3 dl)
- mix the dry ingrediants in a large bowl
- beat the eggs in a separate bowl; add oil
- stir the wet ingredients into the dry ones until the dry are moistened; dont beat them
- add the vanilla, the pineapple and the mango
- pour the batter into your pans. there is enough for either:
3x9-inch rounds (to make a thin three-layer)
1x6-inch round and 1x9-inch hexagonal (to make a small, chubby double-decker)
2x8-inch rounds (to make a tall two-or-three layer)
- bake at 350F / 177C for 30-45 minutes, depending on pan size
Cream Cheese frosting
to put between the layers and over the final cake
1 8-oz / 225g cream cheese, softened
1/2 cup / 1.2 dl butter or margarine, softened
16-oz / 4.7 dl powdered sugar
1 teaspoon vanilla extract
- beat the creamcheese and butter at medium speed with an electric mixer until smooth
- add powdered sugar in small amounts, beating at low speed until light and fluffy
- stir in vanilla
...and this is what is going on in my house. yay hooray.

16-oz / 4.7 dl powdered sugar
1 teaspoon vanilla extract
- beat the creamcheese and butter at medium speed with an electric mixer until smooth
- add powdered sugar in small amounts, beating at low speed until light and fluffy
- stir in vanilla

off to clean. my little bro greg and his best friend jimmy are flying in to cph tomorrow, spending the night, then jetting off to france to watch the lé mans...and then turning around again to come to my wedding. still have lots to do in the way of planning and organizing...and weight-losing and tanning and whitening and whatever, it never stops...but i am having a lot of fun.
